The bookmarks the added PDFs already have, one level under the Bookmark block before them. Those of left-out pages are dropped.

Where and when the photos were taken, and the camera. Left out unless you keep them. Photos that need resizing or editing lose these details either way.

Grayscale applies to the page, backgrounds, headers and watermarks. Text stays selectable. It changes appearance only and doesn’t compress the file. PDF comments and form fields may keep their colors.
